1. Vermicelli is made from durum wheat semolina and eggs and gets it’s name from the Italian word “vermi” meaning ‘worms.’
2. Linguini is a flat, ribbon-like pasta with ample surface area for sauces to adhere. Ideal choice for seafood dishes such as linguini with clams.
3. The name capellini comes from the Italian word “capelli”, which means ‘hair.’ Capellini is delicate, so it’s often sold in nests to prevent breakage.

5. Farfalle in Italian means ‘butterflies.’
6. For Wedding Soup, just about any small pasta will work but for the traditional round shape you want to use orzo, acini de pepe or pearl couscous.
7. Bucatini is slightly thicker than speghetti and the name comes from ‘buco,’ which means ‘hold’ in Italian. Often used to make cacio e pepe and carbonara.
8. Quinoa is a grain but orzo and couscous are both made from durum wheat and considered pasta.
9. Gnocchi is a type of Italian dumpling or pasta. I’ve also had it made with ricotta instead of potatoes. Excellent!
10. Regarding Marco Polo, no one knows for certain. The myth about him has been debunked as historical evidence shows pasta was in Italy long before Marco traveled to China.
