Gnocchi and Sausage
This recipe is very easy and so very good. I personally don’t make gnocchi by hand as it is readily available in the grocery store and generally pretty good for “ready-made” pasta. Gnocchi and Sausage
Total Time 25 minutes
Servings 4 people
Ingredients
- 2 – 9oz. packages refrigerated gnocchi or 1- 17.5 oz. package shelf-packaged gnocchi
- 1 tablespoon olive oil
- 1 medium onion finely chopped
- 1 lb. Italian sausage loose not in casings
- 1 clove garlic finely chopped
- 1 5 oz. bag baby spinach
- 3/4 cups 3 ounces grated Parmesan cheese, plus more for garnish
- Salt & pepper to taste
Instructions
- Cook the gnocchi according to the package directions, reserving 1/2 cup of the cooking water
- Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the sausage and cook, crumbling it into small pieces until browned, 5-7 minutes. Add the garlic, spinach, salt and pepper and cook, tossing frequently until the spinach wilts, about 3 minutes
- Add the drained gnocchi, the reserved cooking water, and Parmesan cheese and toss. Serve with additional Parmesan.
