Gnocchi and Sausage

This recipe is very easy and so very good. I personally don’t make gnocchi by hand as it is readily available in the grocery store and generally pretty good for “ready-made” pasta. Of course, if you have the time, I always prefer fresh rather than store bought but that’s just me. Want to know a little history about gnocchi? Visit here


This recipe serves:  4

Total time:  25 minutes


  • 2 – 9oz. packages refrigerated gnocchi or 1- 17.5 oz. package shelf-packaged gnocchi
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1 lb. Italian sausage, loose not in casings
  • 1 clove garlic, finely chopped
  • 1 5oz. bag baby spinach
  • 3/4 cups (3 ounces) grated Parmesan cheese, plus more for garnish
  • Salt & pepper to taste


  1. Cook the gnocchi according to the package directions, reserving 1/2 cup of the cooking water
  2. Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the sausage and cook, crumbling it into small pieces until browned, 5-7 minutes. Add the garlic, spinach, salt and pepper and cook, tossing frequently until the spinach wilts, about 3 minutes
  3. Add the drained gnocchi, the reserved cooking water, and Parmesan cheese and toss. Serve with additional Parmesan.
